What is a good alternative to spaghetti for one person? My family wants to eat it but I had gastric bypass surgery and can't have the pasta. I don't want to cook spaghetti squash unless it's good reheated because it seems like it would be too much for one person.


Spaghetti squash is a great choice and it is good reheated. You can also purchase it frozen to control the portion sizes. Contrary to popular belief, frozen veggies have just as much nutritional value as fresh items, and sometimes more because the nutrients are preserved when harvested. You could also try shredding a zucchini, which is also great reheated.
